Ingredients
  

Mushrooms

  • 8 ounces mushrooms washed and dried

Chicken

  • 2 pieces chicken breasts halved and pounded to ¼ inch thickness

Sauce

  • 2 tablespoons butter divided
  • 1 cup heavy cream
  • 2 tablespoons mustard
  • cup water
  • to taste salt
  • to taste black pepper
  • to taste chives for garnish

Cooking Instructions

  • Wash and dry the mushrooms, slice half, and quarter the other half.
  • In a large skillet over medium heat, melt 2 tablespoons of butter and add mushrooms. Cook for 10 to 15 minutes, stirring occasionally, until browned.
  • Halve the chicken breasts horizontally, pound to ¼ inch thickness, pat dry, and season with salt and pepper.
  • Stir the mustard into the cream.
  • Once the mushrooms are cooked, sprinkle with salt and pepper, then deglaze with ⅓ cup of water.
  • In another skillet over medium-high heat, melt the remaining 2 tablespoons of butter. Cook the chicken for about 5 minutes until browned.
  • Stir the mustard-cream mixture into the mushrooms and simmer for about 5 minutes until thickened.
  • Flip the chicken, cooking for an additional minute until fully cooked.
  • Spoon the creamy mushrooms on and around the chicken, garnish with chives, and serve.

Notes

Ensure the chicken reaches an internal temperature of 165°F.
