Ingredients
  

Mushrooms

  • 8 ounces mushrooms washed and sliced

Butter

  • 4 tablespoons butter divided in steps

Chicken

  • 2 pieces chicken breasts halved and pounded

Seasoning

  • to taste salt
  • to taste pepper
  • to taste mustard

Liquid

  • cup water
  • ¼ cup heavy cream
  • 1 tablespoon mustard for cream sauce

Garnish

  • to taste chives for serving

Cooking Steps

  • Wash and dry the mushrooms, slice half and quarter the other half.
  • Melt 2 tablespoons of butter in a skillet, add mushrooms, and cook until browned.
  • Halve chicken breasts horizontally and pound to ¼-inch thickness, season with salt and pepper.
  • Mix mustard into the cream in a measuring cup.
  • Deglaze the browned mushrooms with ⅓ cup of water.
  • In another skillet, melt 2 tablespoons of butter and cook the chicken.
  • Stir mustard-cream into the mushrooms and simmer until thickened.
  • Flip chicken and cook until just cooked through.
  • Spoon creamy mushrooms over the chicken, garnish with chives, and serve.
