  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup black beans rinsed and drained
  • 1 cup corn fresh or frozen and thawed
  • 1 whole red bell pepper diced
  • 1 whole avocado diced
  • 1 small red onion thinly sliced
  • ½ cup cilantro chopped

Dressing Ingredients

  • 1 whole lime juiced
  • ¼ cup olive oil
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste

Preparation Steps

  • In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, and diced red bell pepper.
  • Add the diced avocado and sliced red onion, being careful not to mash the avocado.
  • In a separate bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Finally, sprinkle chopped cilantro on top and serve immediately, or chill for later.

Notes

For added spice, consider adding diced jalapeños or for creaminess, crumble feta cheese on top.
