Ingredients
  

Meat

  • 1 package beef smoked sausage sliced on the bias into thin medallions

Fats

  • 2 tablespoons butter
  • 1 tablespoon olive oil plus extra for drizzling

Vegetables

  • 2 onions quartered and thinly sliced
  • 2 garlic cloves pressed through garlic press
  • 10 medium-size red skin potatoes peeled and sliced into ½ inch thick circles

Spices

  • 1 salt to taste
  • ¾ teaspoon freshly cracked black pepper
  • 2 teaspoons paprika
  • ½ teaspoon smoked paprika

Stock

  • 1 ½ cup chicken stock

Garnish

  • 1 tablespoon chopped flat-leaf parsley

Instructions
 

Preparation

  • Gather and prep all ingredients according to the ingredient list.
  • Heat olive oil in a large non-stick pan over medium-high heat and caramelize the smoked sausage for a few minutes. Remove and set aside.
  • Add butter and another tablespoon of olive oil to the pan; melt and caramelize the sliced onions until golden brown, about 8 to 10 minutes.
  • Stir in garlic, salt, black pepper, paprika, and smoked paprika; sauté until garlic is aromatic.
  • Fold in sliced potatoes and coat well with onion and garlic mixture. Pour in chicken stock.
  • Cover the pan with a lid allowing steam to escape; simmer on medium-low for about 15 minutes, stirring gently.
  • Uncover and continue to simmer for another 10 minutes or until potatoes are tender and sauce thickened.
  • Add caramelized smoked sausage back to the pan with parsley; fold in gently and season if necessary.

Notes

Some potatoes may break up in the sauce, which helps to thicken it.
