Bring a large pot of salted water to a rolling boil, add dried pasta, and boil until al dente. Reserve some pasta water, then drain and set aside.
Heat olive oil in a skillet over medium heat.
Add chopped onions and saute until soft and translucent. Add chopped garlic and saute for 30 seconds, stirring constantly so it doesn't burn.
Add ground beef, break it into the skillet, and brown the meat.
Pour Rotel into the browned beef, add tomato paste, Cajun seasoning, salt, and black pepper, and stir to combine and simmer for 3-5 minutes.
Pour into the sauce the cream and reserved pasta water (about half a cup) and stir to combine.
Add grated Parmesan cheese and stir to combine until fully melted in the Rotel beef sauce.
Finally, add cooked pasta and stir to combine. Check for seasoning and adjust accordingly. Add more pasta water if needed.
Sprinkle chopped parsley on the pasta, take it off the heat and serve immediately. Enjoy with a side of homemade garlic bread and everyday salad!
