Ingredients
  

  • 800 g ground beef ≈1.75 lb
  • 2 medium onions ≈300 g, sliced
  • 4 tablespoon butter 60 g, divided
  • 2 tablespoon vegetable oil 30 ml
  • 8 slices cheese ≈120 g, optionally doubled to 16 slices
  • 8 slices rye bread
  • 2 teaspoon harissa 10 g, optional
  • salt to taste

Instructions
 

  • Prepare the sauce: In a narrow container, add the egg, mustard, and harissa (optional). Pour the oil on top. Insert the immersion blender and blend without moving for about 8 seconds. Gradually raise while blending to emulsify and create a creamy mayonnaise. Season with a pinch of salt. The sauce is ready in less than 20 seconds.
  • Caramelize the onions in 1 tablespoon of butter + 1 tablespoon of oil for 12–15 minutes. Reserve.
  • Shape the beef into 4 patties of 200 g each. Lightly season with salt.
  • Cook the patties for 4–5 minutes on each side. Let rest.
  • Butter one side of each slice of bread. On the unbuttered side, layer: cheese → patty → onions → cheese. Close with bread (buttered side out).
  • Grill in a frying pan until golden (≈2 minutes per side).
  • Serve hot, cut in half.

Notes

You can substitute cheese with provolone, gruyère, or blue cheese. Rye bread is classic, but country bread works too. For a lighter version, use whole grain bread and less butter. Caramelized onions can be kept in the fridge for 3 days.
