Ingredients
  

Tortilla Wraps

  • 2 tortilla wrap recipe for homemade in notes

Filling

  • 100 g feta cheese
  • teaspoon smoked paprika or to taste
  • teaspoon salt or to taste
  • teaspoon pepper or to taste
  • 3 cubes frozen spinach defrosted and excess water squeezed out
  • 25 g reduced fat cheese grated

Caramelised Onion

  • 1 onion finely chopped
  • 2 tablespoon water
  • 2 tablespoon honey

Instructions
 

Preparation

  • Make the caramelised onions first. Finely chop an onion and fry with water or oil for 5-10 minutes until soft. Add 2 tablespoon of water and 2 tablespoon of honey and mix well into the onions. Leave for the liquid to reduce stirring regularly to avoid burning honey. When the onions are brown and sticky they are ready.
  • Layer up the feta, seasoning, spinach, onions and cheddar over half of the tortilla wrap leaving a gap around the edge.
  • Fold over the tortilla to cover the toppings and place on a hot, dry frying pan for 2-3 minutes per side to toast. The cheese should melt just enough to seal the edges of the quesadilla.
