Equipment

  • oven
  • rolling pin
  • Baking sheet
  • Parchment paper
  • brush

Ingredients

Puff Pastry

  • 1 sheet puff pastry

Sugar and Spices

  • ½ cup sugar
  • ¼ cup ground cinnamon

Other

  • ¼ cup melted butter

Instructions

  • Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking the palmiers.
  • On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases and make it ready for toppings.
  • Using a brush, evenly coat the surface of the pastry with melted butter to help the sugar and cinnamon adhere and to add richness.
  • Sprinkle the sugar and ground cinnamon mixture evenly over the buttered pastry to infuse sweet and warm flavors.
  • Fold the sides of the pastry towards the center so both edges meet in the middle, then tightly roll the pastry in from both ends toward the center to form a double roll.
  • Cut the rolled pastry into slices approximately ½ inch thick to create individual palmiers.
  • Place the sliced palmiers cut-side up on a baking sheet lined with parchment paper, spaced apart to allow for expansion.
  • Bake in the preheated oven for 15-20 minutes or until the palmiers turn a gorgeous golden brown and become crispy.
  • Remove from the oven and let the palmiers cool completely to set their shape and texture before serving.

Notes

Ensure the puff pastry is cold before rolling for easier handling and better flakiness. You can add chopped nuts like pecans or walnuts on top of the cinnamon sugar for extra crunch. Store leftovers in an airtight container at room temperature for up to 2 days to maintain crispiness. For a festive touch, drizzle with melted white or dark chocolate once cooled. Use a sharp knife or dental floss to slice the pastry rolls cleanly without squashing them.
