Ingredients
  

Beef and Vegetables

  • 1 lb beef, cut into strips, cubes, or thin slices flank, sirloin, or ribeye
  • 4 oz pepper of choice bell pepper, jalapeño, poblano, etc.
  • 4 oz onion, cut into chunks or thin slices
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh ginger, sliced
  • 1 tablespoon oyster sauce
  • 2 scallions cut into 1-inch pieces
  • 1 tablespoon cooking oil

Marinade

  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar

Cooking Steps

  • Slice or cube beef to your liking. Cut peppers and onions to your preferred shape. Prep scallions, ginger, and garlic.
  • In a bowl or zip-top bag, mix beef with soy sauce, rice wine, sesame oil, cornstarch, and sugar. Let marinate for 15–30 minutes.
  • Heat oil in a large nonstick pan or wok over medium-high heat. Add ginger and beef. Stir-fry until mostly browned. Remove from pan.
  • Add more oil if needed. Stir-fry garlic, peppers, and onions for 2–3 minutes until just tender.
  • Return beef to pan. Add scallions and oyster sauce. Stir-fry for 1–2 minutes more until everything is coated and beef is cooked through.
  • Enjoy hot with rice or cauliflower rice!

Notes

Best beef cuts: Flank, sirloin, or ribeye work best—slice against the grain for tenderness. Even 15 minutes of marinating makes a difference, but 30–60 minutes adds deeper flavor and softer texture. Don't overcrowd the pan: Stir-fry the beef in batches if needed for a nice sear instead of steaming. Add more veggies like mushrooms or snap peas for variety. A small amount of sugar balances the savory sauces and helps with browning.
