Ingredients
  

  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper (red or yellow), diced
  • ½ cup red onion, thinly sliced
  • ½ cup grated Parmesan cheese For topping
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • ¼ cup chopped fresh herbs (basil or parsley) Optional

Instructions
 

  • In a large bowl, combine the chopped lettuce, halved cherry tomatoes, diced cucumber, diced bell pepper, and sliced red onion.
  • In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine all the ingredients.
  • Add the grated Parmesan cheese on top and give it another light toss.
  • If desired, sprinkle with chopped fresh herbs before serving.

Notes

This salad can be customized based on seasonal vegetables. For a creamier texture, consider using shaved Parmesan.
