Ingredients
  

Crust

  • 200 g Graham crackers or butter cookies (crumbled)
  • 90 g Unsalted butter (melted)

Cheesecake Filling

  • 600 g Cream cheese (Philadelphia) at room temperature
  • 150 g Granulated sugar
  • 200 ml Heavy cream
  • 3 units Eggs (medium)
  • 1 unit Lemon (zest and juice)
  • 1 tablespoon Flour

Berry Sauce

  • 250 g Mixed berries (raspberries, blueberries, blackberries, strawberries) fresh or frozen
  • 40 g Granulated sugar
  • 1 tablespoon Lemon juice

Decoration

  • 8 units Fresh raspberries for each slice
  • 8 units Mint leaves for each slice
  • Crumbled cookies for sprinkling

Instructions
 

Crust Preparation

  • Crush the cookies to a fine powder.
  • Mix the cookies with the melted butter until sandy.
  • Press this mixture into the bottom of the springform pan, packing it tightly with the back of a spoon.
  • Place the pan in the refrigerator for 20 minutes to firm the crust.

Cheesecake Filling Preparation

  • Preheat the oven to 160°C (320°F).
  • In a bowl, whisk the cream cheese with the sugar until smooth.
  • Add the heavy cream, then add the eggs one at a time, mixing gently.
  • Add the lemon zest and juice, then the flour. Mix until the batter is smooth.
  • Pour the batter over the crust and smooth the surface with a spatula.
  • Bake for 50 to 55 minutes; the center should remain slightly jiggly.
  • Let cool to room temperature, then refrigerate for at least 4 hours (ideally overnight).

Berry Sauce Preparation

  • In a saucepan, heat the mixed berries with the sugar and lemon juice over low heat.
  • Let simmer for 8 to 10 minutes, then blend and strain to remove seeds.

Plating and Serving

  • Remove the cheesecake from the springform pan and cut into equal slices.
  • Top each slice with berry sauce, add a raspberry, a mint leaf, and some crumbled cookies.

Notes

Use Philadelphia cream cheese for an authentic result. Prepare the cheesecake the day before for optimal texture. For a crunchier crust, add a tablespoon of sugar to the cookie mixture. The berry sauce can be prepared in advance and keeps for 3 days in the fridge. For easy removal, line the pan with parchment paper.
