This Mexican rice recipe makes a wonderful restaurant-style side dish for any Mexican dinner.

Ingredients
  

  • 3 tablespoons vegetable oil
  • 1 cup uncooked long-grain rice
  • ¼ cup chopped onion
  • 1 teaspoon garlic salt
  • ½ teaspoon ground cumin
  • 2 cups chicken broth
  • ½ cup tomato sauce

Instructions
 

  • Gather all ingredients.
  • Heat oil in a large saucepan over medium heat. Add rice, onion, garlic salt, and cumin; cook, stirring constantly, until rice is puffed and golden.
  • Stir in chicken broth and tomato sauce; bring to a boil.
  • Reduce heat to low, cover, and simmer for 25 minutes. Fluff rice with a fork.
  • Serve and enjoy!

Notes

You can use brown rice instead of white rice; increase simmer time to 40–45 minutes. Stir in your favorite hot salsa instead of tomato sauce for added heat. It's great for filling burritos, or for using as a base for rice salad bowls. Also delicious served with grilled fish.
