Ingredients
  

  • 2.5 cups cake flour sifted
  • 1.5 cups sugar
  • 3.5 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 cups vegetable shortening like Crisco
  • 0.75 cups whole milk preferably evaporated or buttermilk
  • 0.25 cups maraschino cherry juice
  • 1 teaspoon vanilla
  • 2 teaspoons almond extract
  • 4 whole egg whites unbeaten
  • 0.5 cups chopped maraschino cherries around 15 to 18, blotted dry
  • 0.5 cups chopped pecans or walnuts optional
  • 4 cups powdered sugar for frosting
  • 4 tablespoons butter for frosting
  • 1 teaspoon almond extract for frosting
  • 8 tablespoons cherry juice for frosting or use milk
  • 1 cup sugar for 7-minute frosting
  • 0.25 teaspoon salt for 7-minute frosting
  • 0.5 teaspoon cream of tartar for 7-minute frosting
  • 2 egg whites for 7-minute frosting
  • 3 tablespoons water for 7-minute frosting
  • 1 teaspoon vanilla extract for 7-minute frosting
  • 2 drops red food coloring optional for frosting

Instructions
 

  • Preheat the oven to 350 degrees and grease and flour 2-9-inch heart-shaped pans.
  • In a large bowl, add the flour, sugar, baking powder, and salt, whisk together. Add the shortening to that bowl and set it aside.
  • In another bowl, add the milk, cherry juice, and extracts.
  • Pour that into the bowl with the shortening and flour mixture and, using an electric mixer, beat for 2 minutes until blended evenly.
  • Add the egg white, then beat for 2 more minutes.
  • Fold in the cherries.
  • Pour into the prepared pans and bake for 25 to 30 minutes, checking with a toothpick.
  • For a sheet cake, bake around 45 minutes.
  • For a Bundt pan, bake for 55 to 60 minutes.
  • For butter cream frosting, mix butter with powdered sugar and cherry juice until light and fluffy, then add extract.
  • For 7-minute frosting, combine sugar, salt, cream of tartar, egg whites, and water in a pot and beat over low heat for 7 minutes until peaks form.
  • Stir in food coloring if using, and vanilla.
  • Decorate with cherries.

Notes

Use the toothpick method to check for doneness. Consider drizzling layers with maraschino cherry juice for extra moisture. Alternatives for fruit include red raspberries or strawberries.
