Cooking the Chicken

  • Cook the chicken on the grill for 6–8 minutes per side until it reaches an internal temperature of 165°F. Let it rest before slicing.

Prepare the Salsa

  • Combine diced pineapple, red bell pepper, red onion, cilantro, lime juice, and a pinch of salt in a medium bowl. Mix well.

Cook the Rice

  • Prepare rice according to package directions and fluff with a fork.

Assembly

  • Layer rice in bowls, add sliced chicken, top with pineapple salsa, and garnish with extra red onion and cilantro. Serve with lime wedges.
