- 1.5 lbs baby or fingerling potatoes
- 3 tablespoons olive oil
- 2 tablespoons honey
- 3 tablespoons dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon dried thyme
- 0.5 teaspoon paprika
- 1 tablespoon fresh chives, chopped
- Kosher salt to taste
- freshly ground black pepper to taste
Cooking Instructions
Preheat oven to 425°F and grease a rimmed baking sheet with nonstick spray.
In a large bowl, whisk together olive oil, honey, dijon mustard, garlic powder, onion powder, thyme, paprika, salt, and pepper. Add potatoes and toss to coat.
Spread potatoes out evenly on baking sheet, drizzling with any extra sauce. Bake until fork tender and golden brown, turning once halfway through, about 30 minutes.
