  • Preheat your oven to 400°F (200°C).
  • In a baking dish, combine the halved cherry tomatoes, 1 tablespoon of olive oil, salt, black pepper, and garlic powder. Toss to coat.
  • Place the baking dish in the preheated oven and roast the tomatoes for about 15-20 minutes, or until they are soft and slightly caramelized.
  • While the tomatoes are roasting, season the cod fillets with the remaining olive oil, salt, and black pepper.
  • Preheat a grill or grill pan over medium-high heat. Grill the cod fillets for about 4-5 minutes on each side, or until the fish flakes easily with a fork.
  • In a bowl, mix together the sour cream, chopped dill, lemon juice, and lemon zest until well combined.
  • Once the tomatoes are done roasting, remove them from the oven and set aside.
  • Place the grilled cod on a plate, top with roasted tomatoes, and drizzle the creamy dill sauce over the top.
