Dry Ingredients

  • 2 cups all-purpose flour
  • 0.5 cups sugar
  • 0.25 cups light brown sugar packed
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Wet Ingredients

  • 1.5 cups mashed ripe bananas about 3 very ripe bananas
  • 0.25 cups plain Greek yogurt nonfat or regular
  • 2 large eggs
  • 0.25 cups vegetable oil
  • 2.5 teaspoons vanilla extract
  • 1 cup chopped walnuts or pecans or chocolate chips

Baking Instructions

  • Preheat the oven to 350°F. Line a 9-inch loaf pan with parchment paper and grease it.
  • In a large bowl, whisk together the flour, sugar, brown sugar, baking soda and salt.
  • In a separate bowl, whisk together the mashed bananas, eggs, Greek yogurt, vegetable oil and vanilla extract. Add wet to dry ingredients and stir until combined. Stir in chopped nuts or chocolate chips.
  • Scrape the batter into the prepared loaf pan and bake for 50 to 60 minutes, until a toothpick comes out clean.
  • Allow the bread to cool completely in the pan, then lift it out using the parchment paper to slice and serve.

Notes

This banana bread is a perfect way to add protein and moisture without sacrificing flavor.
