Ingredients
  

For the chicken

  • 1 pound boneless skinless chicken breasts or 4 cutlets, organic if possible
  • 1 to 1 ¼ teaspoons kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon cumin
  • ¼ teaspoon dried dill
  • Freshly ground black pepper
  • 2 tablespoons olive oil

For the bowl

  • 1 cup long grain white rice
  • ½ teaspoon ground turmeric
  • ¼ teaspoon garlic powder
  • 1 handful cherry tomatoes sliced in half
  • 1 Pickled Red Onions made in advance or ½ small red onion, thinly sliced
  • 1 handful olives pitted and sliced
  • 1 handful feta cheese
  • 1 ½ cups full-fat Greek yogurt
  • 1 large garlic clove minced
  • ½ teaspoon dried dill
  • ½ tablespoon red wine vinegar
  • 1 ½ tablespoons olive oil
  • Salt and pepper

Cooking Instructions

  • Make the rice: Rinse rice under cold water, then drain. In a saucepan, bring 1 ¾ cups water to a boil. Add rice, turmeric, garlic powder, and ¼ teaspoon salt. Stir once and simmer for 10 to 15 minutes. Remove from heat, cover, and let steam for 5 minutes. Fluff with fork.
  • Make the tzatziki: Grate ½ cucumber, squeeze out liquid, and mix with yogurt, garlic, red wine vinegar, olive oil, remaining salt, dill, and pepper. Stir in grated cucumber.
  • Cook the chicken: Butterfly chicken breasts if needed. Season with salt and spice mix. Heat olive oil in a skillet and cook chicken for 3 to 5 minutes per side until internal temperature is 165°F. Let rest before slicing.
  • Assemble the bowls: Add rice to a bowl, top with veggies, chicken (or chickpeas), olives, feta, and a dollop of tzatziki.

Notes

For chickpeas variation (vegetarian and vegan): use a 15-ounce can, season, and heat in olive oil. For a dairy-free sauce, substitute with tahini sauce. Meal prep by preparing chicken and tzatziki in advance.
