Ingredients
  

  • 1 lb chicken breasts cut into cubes
  • 4-5 small/medium-sized russet potatoes
  • olive oil
  • salt for seasoning
  • pepper for seasoning
  • garlic powder for seasoning
  • paprika for seasoning
  • 2 tablespoon butter
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1-2 tablespoon minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce
  • 1 cup shredded mozzarella cheese

Instructions
 

  • Wash potatoes, peel them, and cut them up into small cubes.
  • Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  • Cook the potatoes in the air fryer at 400 degrees F for about 25 minutes, shaking them around at least a couple of times while they cook.
  • Once the potatoes are about halfway through cooking, cut the chicken into cubes.
  • Cook the chicken in a skillet on medium-high heat with 2 tablespoon of butter.
  • Season the chicken with ½ teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
  • Once the chicken is finished cooking, add minced garlic and the Parmesan Garlic sauce. Use just enough sauce to coat the chicken.
  • Add the crispy cooked potatoes to the skillet and stir well.
  • Top with shredded mozzarella cheese.
  • Broil in the oven for just a few minutes to melt the cheese.
  • Top with dried parsley and a little more Parmesan Garlic sauce if desired.

Notes

If you don't have an air fryer, cook the potatoes in the oven at 400 degrees F for about 30 minutes, stirring a few times during cooking.
