Ingredients
  

Plantains and Seasoning

  • 5 pieces green plantains
  • 2 tablespoons lemon juice
  • a pinch salt

Pork Belly

  • 1 pound pork belly
  • ½ piece red onion
  • 6 cloves garlic
  • 2 tablespoons vegetable oil

Instructions
 

Preparation

  • Wash the plantains and chop each into 3-4 chunks, with skin on.
  • Place in a pot and cover with water, season with salt and add lemon juice.
  • Cook on medium heat for about 15-25 minutes, until tender.
  • Cut the pork belly into cubes, season with salt, and fry until crispy.
  • Keep about ½ cup of the fat, discard the rest, and sauté onion and garlic in the fat until golden.
  • Ladle 1 cup of the cooking water, drain plantains, peel using a fork, and mash the pulp.
  • Add reserved hot water as needed for consistency, mix in fried onion, garlic, and half the pork belly cracklings.
  • Serve immediately, garnished with extra onion, cracklings, and chopped cilantro.
