Ingredients
  

Vegetables

  • 3 medium potatoes boiled
  • 200 g fine French green beans canned or boiled
  • 2 medium tomatoes chopped
  • 1 tablespoon chopped parsley

Dressing

  • 1 teaspoon Dijon mustard
  • 6 tablespoon olive oil or more as needed
  • 1 clove garlic minced
  • 1 teaspoon apple cider vinegar or lemon juice
  • sea salt to taste

Instructions
 

Preparation

  • Boil potatoes on low heat until cooked (with skin on). Check with fork. Peel and cut in small pieces. Chop tomatoes and parsley as well.
  • In a large salad bowl mix with chopped boiled potatoes and drained green beans.
  • In a separate bowl mix Dijon mustard, olive oil, minced garlic, vinegar and salt. Stir well to combine. Add to salad bowl and mix everything together. Serve.

Notes

I use French canned green beans for this recipe. Dressing units are indicative, adjust quantities to your own preferences.
