Ingredients
  

Cake Ingredients

  • 4 large eggs at room temperature
  • 6 tablespoons unsalted butter melted
  • cup neutral oil such as canola or vegetable
  • 2.5 teaspoons vanilla extract or paste
  • 1 cup granulated sugar
  • 0.5 teaspoon kosher salt
  • 1.33 cups cake flour
  • 1 teaspoon baking powder

Cream Ingredients

  • 5 ounces cream cheese at room temperature
  • 1.25 cups powdered sugar sifted if lumpy
  • 2.5 teaspoons vanilla extract or paste
  • 0.125 teaspoon kosher salt
  • 2.5 cups cold heavy cream

Assembling Ingredients

  • 2 pounds ripe but firm strawberries plus more for decorating the top

Instructions
 

Make the cake

  • Preheat the oven to 325ºF and prepare the springform pan with parchment paper.
  • Stir melted butter, oil, and vanilla extract together.
  • Beat eggs in a stand mixer and gradually add sugar and salt until voluminous and thick.
  • Quickly pour in the oil mixture and beat until combined.
  • Sift flour and baking powder into the bowl, beat on low until just combined.
  • Fold the batter, scraping against the bottom, and transfer to the springform pan.
  • Bake until golden and a tester comes out clean, about 30 to 35 minutes. Cool in the pan for 1.5 hours.

Prepare for assembling

  • Select uniform strawberries, remove tops, and cut in half lengthwise.
  • Trim remaining strawberries to match height with the halves for the center.
  • Remove the cake from the pan and prepare the sides with parchment for assembling.

Make the cream

  • Beat cream cheese, powdered sugar, vanilla extract, and salt together until combined.
  • Slowly add cold cream and beat until it holds a soft peak.

Assemble and finish

  • Cut the cake in half and place the bottom layer in the pan.
  • Line strawberry halves around the edge and arrange trimmed whole strawberries on top.
  • Spread cream over the berries and gently tap the pan to settle.
  • Top with the remaining cake layer and spread remaining cream over it.
  • Refrigerate until the cream is set, at least 5 hours or overnight.
  • Remove the springform ring and decorate with strawberries as desired before serving.

Notes

Ideally, let the cake sit overnight for the best flavor and texture.
