Ingredients
  

Cucumber and Seasoning

  • ¾ whole English cucumber, partially peeled striped
  • 1 teaspoon kosher salt divided
  • 4 to 5 cloves garlic peeled, finely grated or minced
  • 1 teaspoon white vinegar
  • 1 tablespoon Greek Extra Virgin Olive Oil Early Harvest
  • 2 cups plain Greek yogurt
  • ¼ teaspoon ground white pepper
  • a handful chopped fresh dill or mint optional
  • to serve warm pita bread
  • to serve sliced vegetables

Instructions
 

Preparation

  • Grate the cucumbers using a box grater or a food processor, then toss with ½ teaspoon kosher salt and squeeze dry in cheese cloth.
  • In a large mixing bowl, mix garlic, remaining ½ teaspoon salt, white vinegar, and extra virgin olive oil.
  • Add grated cucumber to the bowl, and stir in yogurt, white or black pepper, and fresh herbs if using.
  • Cover and refrigerate for 30 minutes to 2 hours before serving.
  • Stir the tzatziki sauce, refresh it, and transfer to a serving bowl. Drizzle with extra virgin olive oil if desired.

Notes

This recipe makes a generous 2 cups of sauce. Store in a tightly-covered glass container in the fridge for up to 4 days. Adjust garlic according to preference.
