Ingredients
  

Soup Ingredients

  • 1.5 kg Tomatoes Use ripe, seasonal tomatoes or replace with whole canned tomatoes.
  • 2 tablespoon balsamic vinegar
  • 2 tablespoon olive oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 medium red onions finely chopped
  • 2 cloves garlic finely chopped
  • 0.5 cup fresh basil leaves leaves will be blended.
  • 2 teaspoon tomato paste
  • 8 cups vegetable/chicken broth
  • 0.5 cup cream
  • salt & black pepper to taste
  • fresh basil to serve

Grilled Cheese Ingredients

  • 2 slices bread per person
  • 2 cups grated mozzarella
  • 2 cups grated mature cheddar
  • butter

Instructions
 

Soup Preparation

  • Preheat the oven to 200°C/390°F.
  • Place the tomatoes in a roasting tray and add balsamic vinegar, olive oil, sugar and salt. Stir to combine and roast for 25-30 minutes.
  • In a large pot, sauté the onions in some olive oil until translucent. Add garlic and basil, fry for another minute.
  • Add the roasted tomatoes, tomato paste and sugar. Stir and pour in the stock.
  • Lower the heat, cover the pot and simmer for 10 minutes.
  • Blend the soup until smooth.
  • Add cream and season to taste.

Grilled Cheese Preparation

  • Mix mozzarella and cheddar. Add ½ cup cheese to half of the bread slices and sandwich with remaining slices.
  • Butter both sides generously and cook in a non-stick pan until golden brown and cheese is melted.
  • Serve soup with cream drizzle and fresh basil alongside grilled cheese sandwiches.

Notes

Roasting tomatoes with aromatics builds serious flavor. Using canned tomatoes is fine if fresh ones aren't available. Consider adding chili flakes for heat if preferred.
