  • 5–6 medium ripe tomatoes, sliced (about 4 cups)
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar (or apple cider vinegar)
  • 2–3 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

Optional Add-ins

  • red pepper flakes pinch
  • 1 teaspoon honey or maple syrup
  • ¼ cup thinly sliced red onions or shallots

Preparation Steps

  • Wash and cut tomatoes into ¼-inch slices or wedges. Place in a large bowl.
  • In a small bowl, whisk together olive oil, vinegar, garlic, parsley, basil, oregano, salt, and pepper.
  • Pour the marinade over the tomatoes and gently toss to coat all slices evenly.
  • Cover and refrigerate for at least 30 minutes, or up to 24 hours for maximum flavor.
  • Stir gently before serving. Serve chilled or at room temperature.

Notes

Use in-season, ripe tomatoes for best results. Stir gently to keep slices intact. Perfect as a side dish, salad topping, or sandwich add-on. Store in an airtight container in the fridge for up to 3 days.
