Ingredients
  

Chicken Marinade

  • 1.5 lb chicken breast or thigh
  • ¼ cup organic greek yogurt, plain
  • 1 tablespoon olive oil
  • ¼ onion chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon turmeric
  • ¼ teaspoon saffron
  • 1 tablespoon water
  • 1 lemon juiced

Cooking Instructions

  • Trim off any fat off of the chicken.
  • Add the chicken in a large tupperware container or ziplock bag.
  • Add the onion, greek yogurt, olive oil, salt, pepper, garlic powder, paprika, and turmeric.
  • Mix the saffron threads with warm water until dissolved.
  • Add the saffron to the remaining ingredients and mix well either with your hands or with tongs.
  • Let this sit for at least 15 minutes. The longer it marinates, the better.
  • When you are ready to cook, place the chicken in a single layer in the air fryer.
  • Cook at 390°F for 15 minutes until chicken is cooked through (165°F).
  • Serve the chicken with fresh lemon juice on top, alongside your favorite sides.

Notes

Serve with tzatziki and plain basmati rice for a flavorful meal.
