Vegetables and Cheese

  • 2 cups cherry tomatoes halved
  • 1 medium cucumber diced
  • 1 medium bell pepper diced (red or yellow)
  • ½ medium red onion finely chopped
  • 1 cup Kalamata olives pitted and halved
  • 1 cup feta cheese crumbled
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh oregano chopped (or 1 tablespoon dried oregano)

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Serving

  • 12 small cups or jars (4–6 oz size)
  • Pita chips or breadsticks optional

Preparation

  • Begin by preparing your ingredients: wash and halve the cherry tomatoes, dice the cucumber, and chop the bell pepper into bite-sized pieces. Aim for uniform sizes to ensure even distribution in each cup.
  • Next, finely chop the red onion. You want it to be small enough to blend well with the other ingredients but not so small that it loses its flavor.
  • In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, red onion, Kalamata olives, crumbled feta cheese, fresh parsley, and oregano. Gently toss everything together using a spatula until well mixed.
  • Now, let's create the dressing. In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper to taste. Whisk until emulsified.
  • Pour the dressing over the salad mixture. Gently fold the dressing into the salad until everything is coated without breaking apart the feta too much.
  • Once the salad is ready, it’s time to assemble the cups. Take your small cups or jars and start by spooning a portion of the salad mixture into each one, aiming for about ½ cup of salad per cup.
  • If desired, serve with pita chips or breadsticks on the side.
