Ingredients
  

Chicken Kofta Filling

  • 1 lb ground chicken
  • ¼ cup finely chopped onion
  • 2 cloves garlic, minced
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large egg, beaten
  • ¼ cup breadcrumbs (optional, for binding)

Quesadilla Assembly

  • 4 large flour tortillas
  • 2 cups shredded mozzarella cheese (or a cheese blend of your choice)
  • 1 cup crumbled feta cheese (optional, for added flavor)
  • 2 tablespoon olive oil (for cooking)
  • ½ cup sour cream (for serving)
  • ½ cup salsa (for serving)
  • Fresh cilantro leaves (for garnish, optional)

Instructions
 

Preparation

  • In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, fresh parsley, fresh cilantro, ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper. Mix thoroughly until all ingredients are well combined, about 2-3 minutes.
  • Add the beaten egg to the mixture and breadcrumbs for extra binding, mixing gently just until combined.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Form the chicken mixture into small oval patties and cook for 4-5 minutes on each side until golden brown and cooked through.

Quesadilla Cooking

  • In another skillet, heat 1 tablespoon of olive oil over medium-low heat. Lay out a tortilla, sprinkle half with mozzarella cheese, place kofta patties on top, and sprinkle with feta if using.
  • Fold the tortilla and cook for 3-4 minutes until golden, then flip and cook the other side for another 2-3 minutes until fully melted.
  • Remove from skillet, let rest for a minute, and slice into wedges. Repeat with remaining tortillas.
  • Serve warm with sour cream and salsa.

Notes

Adjust the spices and garnish as desired to suit your taste.
