Ingredients
  

  • 8 oz goat cheese softened
  • 1 cup fresh cranberries (or ½ cup dried cranberries, chopped)
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped pecans (optional)
  • 2 tablespoon honey
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 lbs boneless turkey breast (skinless or skin-on)
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup chicken broth
  • 2 tablespoon unsalted butter melted
  • 1 tablespoon balsamic vinegar (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, combine goat cheese, cranberries, parsley, pecans, honey, thyme, salt, and pepper.
  • Slice the turkey breast lengthwise to create a pocket for the stuffing.
  • Season the outside of the turkey breast with olive oil, garlic powder, onion powder, rosemary, salt, and black pepper.
  • Stuff the turkey breast with the cranberry-goat cheese mixture.
  • Secure the opening with toothpicks or kitchen twine.
  • Place the stuffed turkey breast in a roasting pan. Mix together chicken broth, melted butter, and balsamic vinegar, then pour over the turkey.
  • Roast in the oven for about 50-60 minutes, until the internal temperature reaches 165°F (74°C).
  • Remove the turkey from the oven and cover loosely with aluminum foil. Let it rest for about 10-15 minutes.
  • Slice the turkey breast into medallions and serve warm.

Notes

Ensure to remove toothpicks before serving.
