Ingredients

  • ½ cup buttermilk
  • ½ cup hot water

Mousse Ingredients

  • 1 cup heavy whipping cream for mousse
  • ½ cup semi-sweet chocolate, chopped for mousse
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract for mousse

Ganache Ingredients

  • ½ cup heavy cream for ganache
  • ½ cup semi-sweet chocolate, chopped for ganache

Instructions
 

Baking Instructions

  • Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  • In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
  • Alternate adding dry ingredients and buttermilk into the wet mixture. Mix until just combined, then stir in hot water until smooth.
  • Divide batter between pans and bake for 25–30 minutes. Cool completely.

Mousse Preparation

  • Heat cream for mousse until simmering, pour over chocolate, let sit, then stir until smooth. Cool to room temperature.
  • Whip remaining cream with powdered sugar and vanilla until stiff peaks form. Fold in cooled chocolate mixture and chill for 1 hour.

Ganache Preparation

  • Heat cream for ganache and pour over chopped chocolate. Stir until smooth and glossy.

Assembling the Cake

  • Place one cake layer on a plate, spread mousse evenly, then top with the second layer.
  • Pour ganache over the cake, letting it drip down the sides. Refrigerate for at least 1 hour before serving.

Notes

Ensure all ingredients are at room temperature for better mixing. Do not overmix the batter to keep the cake soft and fluffy. Let the chocolate mixture cool before folding into whipped cream to prevent deflation. Chill the cake properly to help the mousse and ganache set firmly. Use high-quality chocolate for the best flavor.
