Brownie Base

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • ¾ cup brown sugar
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips optional

Cheesecake Layer

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar for cheesecake layer
  • 1 large egg for cheesecake layer
  • ½ teaspoon vanilla extract for cheesecake layer
  • ½ cup caramel sauce
  • 1 pinch sea salt optional

Preparation

  • Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  • In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.
  • Add cocoa powder and vanilla extract, mixing until fully combined.
  • Add eggs one at a time, whisking well after each addition.
  • Fold in flour and salt until just combined, then stir in chocolate chips if using.
  • Pour two-thirds of the brownie batter into the prepared pan and spread evenly.
  • In another bowl, beat cream cheese and sugar until smooth.
  • Add egg and vanilla extract, mixing until creamy.
  • Spread the cheesecake mixture evenly over the brownie layer.
  • Drizzle caramel sauce over the cheesecake layer and sprinkle sea salt if desired.
  • Drop spoonfuls of remaining brownie batter on top and swirl gently with a knife.
  • Bake for 35–40 minutes until the center is set with moist crumbs.
  • Cool completely, then refrigerate for 30 minutes before slicing.

Notes

Use room temperature cream cheese for a smooth cheesecake layer. Avoid overmixing the brownie batter to keep a fudgy texture. Do not overbake; brownies will continue to set as they cool. Chill before slicing for cleaner cuts. Store in the refrigerator for up to 5 days or freeze for up to 2 months.
