Ingredients
  

Dry Mix

  • 2.25 cups flour King Arthur all-purpose flour preferred
  • 0.33 cup brown sugar
  • 2 teaspoon cinnamon freshly ground preferred
  • 2.5 teaspoon baking powder
  • 1 teaspoon salt

Wet Mix

  • 2 bananas mashed until smooth
  • 2 eggs room temperature
  • 1.5 cups milk
  • 1 teaspoon vanilla extract

Cooking and Toppings

  • 0.5 oz ghee 4th & Heart original ghee preferred
  • 1 cup walnuts chopped into ¼-inch pieces

Instructions
 

Preparation

  • In a medium bowl, whisk together the flour, brown sugar, cinnamon, baking powder, and salt.
  • In a separate large bowl, mash the 2 bananas until completely smooth. Add the eggs and milk, stirring until well combined.
  • Pour the wet mixture into the dry mixture and fold gently until just combined. Stir in vanilla and walnuts.
  • Heat a large skillet over medium heat and melt the ghee. Pour ⅓ cup of batter for each pancake and cook until bubbles form, then flip and cook until golden brown.
  • Transfer pancakes to a plate, top with banana slices and walnuts, and serve with syrup and butter.

Notes

These pancakes combine the flavors of banana bread with the fluffiness of pancakes. Adjust toppings to your preference.
