Ingredients
  

Potato Ingredients

  • 20 oz shredded hash browns thawed

Tortilla Ingredients

  • 8 10-inch flour tortillas (burrito)

Meat Ingredients

  • 1 lb bacon diced
  • 12 oz breakfast sausage

Vegetable Ingredients

  • 1 onion diced
  • 1 large bell pepper diced
  • 2 cloves garlic crushed and minced

Egg Ingredients

  • 10 large eggs
  • ¼ cup whole milk
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • salt to taste
  • 6 oz shredded sharp cheddar cheese

Instructions
 

Cook Hash Browns

  • Preheat a large cooking pan over medium heat and add a little oil. Spread shredded hash browns in the pan. Season with salt and pepper, sauté until golden brown. Remove and set aside.

Prepare the Meat

  • Dice raw bacon and take breakfast sausage out of casing. Cook bacon in the same pan until halfway cooked, add sausage, cook until fully cooked.

Cooking Vegetables

  • Cook diced onion and bell pepper in the same pan. Add minced garlic when almost softened, sauté for another minute, remove and set aside.

Cooking Scrambled Eggs

  • Wipe the pan, add some oil, pour in eggs, cook gently while stirring. Once cooked, sprinkle and fold in cheese, then remove.

To Put Together

  • Divide the eggs, meat, and vegetables among tortillas. Fold the bottom flap, tuck in sides, and roll tightly.

To Crisp Up

  • Preheat a large pan over medium heat and add a little oil. Cook burritos until golden brown on each side.

Notes

To store, wrap each burrito air-tight and store in the refrigerator for up to 4 days. To freeze, wrap in aluminum foil and freeze for up to 2 months. To heat, thaw in refrigerator overnight and cook until golden brown.
