Ingredients

  • 1 cup almond flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

  • ½ cup coconut oil melted
  • ½ cup erythritol or preferred sugar substitute
  • 2 large eggs
  • 1 teaspoon vanilla extract

Baking Instructions

  • Pre-heat the oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  • In a large bowl, whisk together the almond flour, baking powder, and salt until well combined.
  • In another bowl, beat the melted coconut oil with erythritol until smooth. Add the eggs and vanilla extract, whisking until fully incorporated.
  • Gradually fold the dry ingredients into the wet mixture using a spatula until they are just combined.
  • Fold in the sugar-free chocolate chips gently, reserving a few to scatter on top.
  • Pour the batter into the prepared pan, spreading it evenly. Bake in the preheated oven for 20-25 minutes.
  • Allow the blondies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and enjoy!
