- 2 eggs
- 1 cup bananas mashed
- 1.5 cups zucchini grated
- 0.5 cups sugar
- 0.5 teaspoon salt
- 0.5 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 0.5 cups olive oil or melted coconut oil
- 1 cup chocolate chips
- 0.5 cups walnuts (optional)
In a large bowl, combine the flour, baking powder, baking soda, cinnamon, salt, and sugar. In a separate bowl, grate the zucchini and squeeze out any excess water.
In a separate bowl, beat together the eggs, bananas, oil, and vanilla extract.
Combine the egg mixture with the dry ingredients.
Fold in the grated zucchini and chocolate chips.
