Ingredients
  

  • 1.5 cups flour
  • 2 eggs
  • 1 cup bananas mashed
  • 1.5 cups zucchini grated
  • 0.5 cups sugar
  • 0.5 teaspoon salt
  • 0.5 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 0.5 cups olive oil or melted coconut oil
  • 1 cup chocolate chips
  • 0.5 cups walnuts (optional)

Instructions
 

  • In a large bowl, combine the flour, baking powder, baking soda, cinnamon, salt, and sugar. In a separate bowl, grate the zucchini and squeeze out any excess water.
  • In a separate bowl, beat together the eggs, bananas, oil, and vanilla extract.
  • Combine the egg mixture with the dry ingredients.
  • Fold in the grated zucchini and chocolate chips.
  • Pour the batter into a well-oiled loaf pan.
  • Bake at 350°F for about 45 minutes, or until a toothpick inserted into the center comes out clean. Let it cool before slicing.
