Ingredients
  

Dry Ingredients

  • 180 g flour
  • 0.75 teaspoon baking powder
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon cinnamon
  • 1 pinch salt
  • 50 g chopped nuts (optional) can substitute with pecans or omit for nut allergies

Wet Ingredients

  • 60 g unsalted butter, softened
  • 180 g sugar
  • 1 large egg
  • 3 medium ripe bananas
  • 120 ml buttermilk or substitute 1 tablespoon lemon juice + 120 ml milk

Baking Instructions

  • Preheat the oven to 180°C. Grease a loaf pan on all surfaces.
  • In a mixing bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Add nuts if using.
  • In another bowl, beat the butter and sugar with an electric mixer until fluffy. Add the egg and beat. Mash the bananas with a fork and add to the mixture. Pour in the buttermilk.
  • Add the dry ingredients alternately until fully incorporated.
  • Bake for about 50-55 minutes, or until a knife comes out clean. Remove from oven and let cool in the pan for 10 minutes before transferring to a cooling rack.

Notes

For buttermilk, measure 1 tablespoon lemon juice (or vinegar) in a measuring cup. Cover with milk until it reaches 120 ml. Mix and let sit for 5 minutes before using.
